While you may be in the market for that all important "Bundt Cake" pan, remember a couple of things. A Bundt pan has a design theme,ie:sunflower,rose,fluted,curved etc. it was a cake mix you bought from the store called a "Bundt Cake" they also could be made from scratch and baked in a special pan made specifically for the Bundt cake mix. The Bundt pan is just that a pan, made of coated cast iron or aluminum for easy release and generally was non-stick. Jello molds are made of ceramic or glass as well as aluminum without non-stick coatings so they can be dipped in hot water after the jello is set to release the jello mold . As years went by the fluted cake pans of the old days,usually aluminum were pushed aside for the non-stick "Bundt" pan because they had to be greased and floured. If it is flat and fluted at the sides it is a tart pan, if it is glass or ceramic it is most likely a jello mold, if it is aluminum with angled unshaped sides it is for angel food cakes. Aluminum most likely will stick if you bake in it unless you grease it well and flour it but for some reason angel food cakes just pull away from the sides with little or no work a little baking spray works great. When buying a Bundt pan remember a couple of things, scratches are not good on the interior because they progress and get worse which in turn means your going to grease and flour and still will have sticking problems if you miss a spot. Look for unused or gently used well tended heavy cast pans with a non-stick surface of TEFLON the chinsy aluminum non-stick pans tend to shed the coating quicker and it sticks to the cakes over time. Hang them or put a protector over them when not in use, they are expensive to buy and deserve to be well maintained, the old cast iron ones need to be greased and stored properly, We owned a bakery for a long time and I found that the heavy cast teflon coated were the best bundts you could buy.
